Just quick post this time! Tune in for a super duper long one tomorrow! Seriously!

On the weekend we made mini quiches. Easy and yum!

The twins helped crack the eggs! ??‍♀️? Which was eventful. But we ended up scooping out so much shell it wasn’t funny!! However Tori was super cute putting all the pastry in the muffin tins!!! They are such good helpers (or hinderers depending on the day)!

We made sweet potato and spinach (normally I put in bacon if I have some), and I put in greek yogurt instead of cream for the egg mixture.

Full ingredients:

  • Puff Pastry
  • Roasted Sweet Potato
  • Baby Spinach
  • Cheese
  • Egg
  • Greek Yogurt
  • Thermomix Stock Paste (I’ve never used bought stock before, so maybe jut salt and pepper if you don’t make if yourself)
  • Herbs

Other ingredients I sometimes use:

  • Sautéed Bacon and Onion
  • Blanched Broccoli
  • Frozen Peas
  • Roasted Pumpkin
  • Sometimes Chicken
  • Sometimes Cherry Tomatoes

The method is pretty obvious? No? ?

Just make it all look like the photo below!

I think we might have eaten them before I took a photo of the finished product!!! Eeeek!

Oh well, if you can’t think of dinner one night this week, then perhaps mini quiches is the way to go! ?
