I won’t even call this a recipe, perhaps just a trick…

…as it only has one ingredient…. Coconut!

Or more specifically coconut flakes. But please, whatever you do, don’t use desiccated or shredded or sweetened coconut. You will need the moisture in the flakes!

Then you literally blend it up! I used two bags of coconut flakes (or 400g) so that the Thermomix would have enough to start turning into a paste instead of just dust…

If it looks like this, keep going!

Until it is a paste…a very thick runny paste!

And now…. what to do with this amazing paste…and why is is amazing.

Well…for reasons I cannot explain, it is really sweet! Much sweeter that the flakes seemed originally…

And so it makes a delicious, nut free, additive free spread.

Some people have it on toast, we haven’t tried that yet…but as weird as it is, the kids and I really like it on crackers…jatz to be exact. Where the salty and the sweet cross…

What other ways can you imagine using it? I think in the inside of a chocolate protein ball would be pretty awesome!
